{"id":595,"date":"2011-10-07T21:03:18","date_gmt":"2011-10-07T21:03:18","guid":{"rendered":"http:\/\/www.chefsjoy.com\/blog\/?p=595"},"modified":"2011-10-07T21:08:00","modified_gmt":"2011-10-07T21:08:00","slug":"spice-cake","status":"publish","type":"post","link":"https:\/\/www.chefsjoy.com\/blog\/recipes\/spice-cake","title":{"rendered":"Spice Cake"},"content":{"rendered":"<p><a href=\"http:\/\/www.chefsjoy.com\/blog\/wp-content\/uploads\/2011\/10\/spice-cake1.png\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-597\" title=\"spice cake\" src=\"http:\/\/www.chefsjoy.com\/blog\/wp-content\/uploads\/2011\/10\/spice-cake1-272x300.png\" alt=\"\" width=\"272\" height=\"300\" srcset=\"https:\/\/www.chefsjoy.com\/blog\/wp-content\/uploads\/2011\/10\/spice-cake1-272x300.png 272w, https:\/\/www.chefsjoy.com\/blog\/wp-content\/uploads\/2011\/10\/spice-cake1.png 300w\" sizes=\"(max-width: 272px) 100vw, 272px\" \/><\/a><\/p>\n<p>It is a clear, cool and beautiful fall day.\u00a0 There is nothing better than the smell of a spice cake baking in the oven.\u00a0 This spice cake recipe is easy to do and the oats in this cake give it a very moist and dense texture.<br \/>\n<strong>Cake<\/strong><\/p>\n<p>1 cup rolled oats, not the quick cooking or instant oats<\/p>\n<p>1 cup boiling water<\/p>\n<p>1\/4 cup buttermilk<\/p>\n<p>1 teaspoon ground cinnamon<\/p>\n<p>l\/4 teaspoon ground nutmeg<\/p>\n<p>1\/4 teaspoon \u00a0ground ginger<\/p>\n<p>1\/4 teaspoon cardamom<\/p>\n<p>1 stick unsalted butter at room temperature<\/p>\n<p>1 cup sugar<\/p>\n<p>3\/4 cup brown sugar<\/p>\n<p>2 eggs<\/p>\n<p>1 teaspoon \u00a0vanilla extract<\/p>\n<p>1 1\/2 cups all purpose flour<\/p>\n<p>1 teaspoon baking soda<\/p>\n<p>1\/2 teaspoon table salt<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Icing<\/strong><\/p>\n<p>1 cup sweetened shredded coconut<\/p>\n<p>3\/4 cup pecan halves<\/p>\n<p>1 cup brown sugar<\/p>\n<p>1\/2 cup heavy cream<\/p>\n<p>1 stick unsalted butter<\/p>\n<p>3 egg yolks<\/p>\n<p>pinch of salt<\/p>\n<p>1 Tablespoon dark rum<\/p>\n<p>1 teaspoon vanilla extract<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Cake<\/strong><\/p>\n<p>Preheat oven to 350 degrees.<\/p>\n<p>Coat two 8&#8243; round cake pans with nonstick spray, line with rounds of parchment, then coat with spray again.<br \/>\nCombine oats, water, buttermilk, and spices in a bowl; let stand for 15 minutes.<br \/>\nCream butter with both sugars in a second bowl until well blended, about 3 minutes. Add the eggs and vanilla and beat to incorporate.<\/p>\n<p>Blend flour, baking soda, and salt into butter mixture just until combined, then add oat mixture.<\/p>\n<p>Divide batter between prepared pans and bake 30-35 minutes, or until a toothpick inserted into the cakes comes. out clean. Cool on a rack for 10 minutes, then invert cakes onto the rack, lift off the pans, and peel away the parchment.
