{"id":468,"date":"2011-07-13T20:00:50","date_gmt":"2011-07-13T20:00:50","guid":{"rendered":"http:\/\/www.chefsjoy.com\/blog\/?p=468"},"modified":"2011-07-21T06:55:33","modified_gmt":"2011-07-21T06:55:33","slug":"vegetable-risotto","status":"publish","type":"post","link":"https:\/\/www.chefsjoy.com\/blog\/recipes\/vegetable-risotto","title":{"rendered":"Vegetable Risotto"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/www.chefsjoy.com\/blog\/wp-content\/uploads\/2011\/07\/vegetables-350.jpg\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-469\" title=\"vegetables 350\" src=\"http:\/\/www.chefsjoy.com\/blog\/wp-content\/uploads\/2011\/07\/vegetables-350-300x198.jpg\" alt=\"\" width=\"300\" height=\"198\" srcset=\"https:\/\/www.chefsjoy.com\/blog\/wp-content\/uploads\/2011\/07\/vegetables-350-300x198.jpg 300w, https:\/\/www.chefsjoy.com\/blog\/wp-content\/uploads\/2011\/07\/vegetables-350.jpg 350w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Summer brings in a beautiful bounty of fresh vegetables.\u00a0 Today we are\u00a0cooking a\u00a0vegetable risotto with items we got out of the garden today.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>2 green apples, cored and thinly sliced<\/p>\n<p>Freshly squeezed juice of a lemon<\/p>\n<p>2 tablespoons extra-virgin olive oil<\/p>\n<p>1 large onion, finely chopped<\/p>\n<p>4 medium potatoes, peeled and cut into small cubes<\/p>\n<p>3 medium zucchini cut into small cubes<\/p>\n<p>1\u00a0large carrot, cut into small cubes<\/p>\n<p>1 3\/4 cups risotto<\/p>\n<p>3 cups boiling vegetable stock<\/p>\n<p>1\u00a0teaspoon dark soy sauce<\/p>\n<p>1\u00a0teaspoon curry powder<\/p>\n<p>2 tablespoons finely chopped dill<\/p>\n<p>Pinch of saffron strands<\/p>\n<p>Salt and freshly ground black pepper<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Place the apples in a bowl. Drizzle with the lemon juice. Heat the oil in a large frying pan over medium heat. Add the onion and saute until transparent, 3-4 minutes. Add the potatoes, zucchini,and carrot. Saute for 2 minutes more. Add the rice and saute for 2<br \/>\nminutes. Add 1 cup of the stock and stir until it is absorbed. Add the apples and lemon juice and mix well. Keep adding the stock, I cup at a time, cooking and stirring until each addition has been absorbed and the rice is tender, 15-20 minutes. Remove from the heat and stir in the soy sauce, curry powder, dill, and saffron.
