Try slicing them into rounds and placing them on a plastic wrapped baking sheet and freezing overnight.  The next day you can transfer them to sealable plastic bags and store in the freezer.  These are then great in a pitcher of (fruit) water, cocktails, lemonade, tea, and etc.  as they also chill while they flavor.
