The quesadilla is the Mexican take on it. Oaxacan cheese, also known as Asadero cheese, is the strictly authentic cheese to use, but mozzarella makes a good alternative.<\/p>\n<p><strong>Prepare<\/strong>\t15 minutes<br \/>\n<strong>Cook<\/strong>\t30-40 minutes<br \/>\n<strong>Serves<\/strong>\t4<\/p>\n<p>4 oz\/115 g mozzarella cheese grated<br \/>\n4 oz\/115 g Cheddar cheese grated<br \/>\n8 oz\/225 g chorizo sausage outer casing removed or ham diced<br \/>\n4 scallions very finely chopped<br \/>\n2 fresh green chilies such as pompano seeded and very finely chopped<br \/>\n8 flour tortillas<br \/>\nsalt and pepper<br \/>\nvegetable oil for brushing<br \/>\nlime wedges to garnish<\/p>\n<p>1.\tPlace the cheeses, chorizo, scallions, chilies, and salt and pepper to taste in a bowl and mix together thoroughly<br \/>\n2.\tDivide the mixture between 4 flour tortillas, then top with the remaining tortillas.<br \/>\n3.\tBrush a large, nonstick or heavy-bottom skillet with oil and heat over medium heat. Add 1 quesadilla and cook, pressing it down with a spatula for 4-5 minutes or until the underside is crisp and lightly browned. Turn over and cook the other side until the cheese is melting. Remove from the skillet and keep warm.
